Rosalba Cifuentes Tovía's Mayan Harvest coffee is back in our warehouse and we are delighted to share it with you. Rosalba has dedicated herself to helping producers with small plots of land (averaging 5 acres) earn a better price for their coffee. She also ensures traceability for her coffee community by personally exporting the coffee directly to the Bay Area. This coffee shines on the cupping table, reminding us of candied lemon peel, honey, light melon, and sweet caramel flavors.

There's just something special about Oaxacan coffees. The name of this coffee comes from the old growth Typica variety, known as "Pluma", which is still grown next to some of the classic haciendas of Sierra Madre. Expect a thick and syrupy profile, with cinnamon and dulce de leche complemented by golden raisin and hard candy sweetness.

Jaime Navarro produced and milled this micro-lot on a 19-acre farm called Las Sidras. He processed the cherries using his own micro-mill, which allows for meticulous care in depulping, fermenting, and drying the coffee. The result is a cup with notes of caramel, apple juice, and bittersweet chocolate.

Let's explore the nuances of profile roasting coffee and 4 common mistakes made in the process! Registrants will receive a kit of 5 roasted coffees (the same coffee, 5 different roasts) to prepare on their own and taste together with the class. Following the dissection of each roast's flavor, the class will turn to a series of temperature graphs, and discussion will be led highlighting the cause and effect of each flavor iteration. Coffee roasting knowledge recommended, but not required. US registrants only.
