Yemerson puts a particular emphasis on experimental processing, and this coffee is yet another example of this. After harvest, the whole cherries undergo an anaerobic processing – they are put in an oxygen-free environment, which helps control the fermentation and create sweet confectionary notes, before drying under the sun until the correct moisture content is achieved. Roast profile was structured around development of the confectionary notes and the limited break down of malic acid which is one of the first acids to break down during the roasting process – this insured that sufficient balance was maintained. The flavours of this New Zealand exclusive are definitely worth noting. Full of sweet watermelon, grape, white pepper, lavender and jasmine notes, it can truly be compared to a jammy donut (which everyone loves, right?). Something else to note is how silky and decadent it is, with delicate notes shining through near the end of the cup - how good.
