What makes the difference between non-premium and premium instant coffee?

Robusta vs. Arabica Beans

Many instant coffees use Robusta beans which yields a more acrid, bitter taste. On the other hand, coffee produced from the Arabica bean tends to have a sweeter and softer taste. It is higher in acidity with little bitterness. That's why all Waka Instant Coffee uses 100% Arabica beans.

Origin Matters

Another factor in determining coffee quality is the origin of the beans. Colombia is widely regarded as one of the best coffee-producing countries, given it's ideal climate and high altitudes. This helps give more time to develop complex sugars, yielding deeper and compelling flavors.

Spray drying vs. freeze drying

Coffee

Spray-drying is the most common way used by traditional instant coffee brands. This fast and cheaper process sacrifices the taste for speed and cost. The heat applied during this process is what's causing you to taste a burnt flavor when drinking traditional instant coffee. In contrast, instead of applying heat to extract the liquid from the beans, freeze-drying is superior as it doesn't negatively change the taste of the coffee.
