New Rare Coffee - Haraz Collective

Haraz Collective

Only around 0.1% of the world's total coffee production now comes from this ancient coffee origin. Varietals unique to Yemen are grown at high altitudes of up to 2000 meters above sea level before going through double anaerobic natural processing. The result is a coffee with intense ripe berry and brown sugar sweetness complemented with medium acidity and thick syrupy body.

HISTORY
It is believed that coffee was first cultivated and drunk in Yemen, around 1450, by Sufi monks who would drink it to help them stay awake during all night meditations. Until the 18th century, Yemen was the main global exporter of coffee but when other countries began producing coffee at cheaper prices, its production dropped to just 6% of the world's coffee production. Due to its rich history of coffee genetics and deep understanding from farmers we're now seeing a resurgence in the amazing coffee Yemeni produces.
HARAZ COFFEE PRODUCTION

Because coffee has been grown in Yemen for such a long time it is home to a vast diversity of varietals. A research program in 2021 discovered that although some plants could be identified as Bourbon, Typica and SL34, most were from a completely different family of Arabica, now called Yemenia. 

This lot of coffee is from an area where the local farmers call their plants "Jaadi", 83% of which is Yemenia. So, although we cannot be 100% sure exactly what varieties are in this lot, we know that it is mostly made up of the newly discovered Yemenia family.

Once picked farmers, often in remote areas, take their cherries to regional processing stations. This Double Anaerobicly Fermented coffee involves placing freshly picked cherries in hermetic bags, then removing them to be placed in a greenhouse for a similar period. This process is repeated breaking up the fermentation process which helps enhance this coffee's unique cup profile. Finally, the coffee cherries are taken to raised beds to dry under direct sunlight until it reaches a moisture content of 12%. After  being rested for 1-2 months beans are hulled from their cherry then hand sorted and graded ready for export.
