| | You might remember Selasi from arguably the best Bake Off season to date (that's series 7, by the way). A dear friend and die-hard Pact fan, we asked the star baker to create a show-stopping coffee cake that our community could make themselves at home to impress Christmas guests with, and boy did he deliver. Naturally, we also quizzed him on his favourite food and drink. Selasi can't live without plantain or paprika, he's a coffee purist (no milky stuff!), he believes Hackney is home to London's best bakeries, and his idol is Kobe Bryant. Read the full interview here, and find the recipe below. This writer can confirm the cake tastes absolutely delicious.

It feels like every week a new study comes out claiming that coffee can make us achieve all kinds of magic - we draw the line at flying and pulling rabbits out of a hat. Now, here at Pact, we don't profess to be health experts, we just know how to make great coffee. But we're a curious bunch, so we decided to delve a lil' deeper into the benefits of coffee. We asked Doctor Daisy Shearer and Nutritionist Ellie Busby to share their professional opinions. You'll have to read the full piece for all the juicy details, but we reckon Christmas has come early for coffee lovers.

We're going to be mixing it up in our ever-popular recommendations section with personal picks from Pact Team members. |
This month's come from Lowri in our Marketing Department.
A meal I'd happily eat on repeat is... Welsh Cawl. It's also one of Michael Sheen's favourites - total nostalgia in a bowl. Serve this lamb broth with a massive glass of Malbec and a hunk of strong cheddar.
My 2021 music discovery is... Prioritise Pleasure by Self Esteem. 45 minutes of self-affirming anthems - it's a life-changing listening experience!
A book that has stayed with me is... The Girls by Emma Cline. It's loosely based on the 60s Charles Manson affair. I don't have any aspirations to join a cult - it's just very, very good.
The best advice I've ever received is... "Be wary of accepting criticism from anyone you wouldn't go to for advice yourself."

Happy Christmas, folks. Eat, drink and be merry! |
