Brighten up your winter mornings with this rare Yellow Honey processed Ethiopian. We're getting notes of Nougat and Nectarine with a complex, floral acidity.
The Daya Bensa collective is made up of 563 farmers working in the Shantawene area of Sidamo. Here, coffee is traditionally washed but the extra effort in experimenting with yellow honey processing has really paid off. After floating to separate ripe cherries, coffee is pulped to remove the outer layer of the cherry. It is then dried on African raised beds for 13-15 days, one person is assigned a bed to rotate cherries every 15 minutes. Deya Bensa is a particularly community oriented business and bonus payments are given to farmers for volume produced, consistency and the the extra meticulous work in the crucial drying process.
