This naturally processed lot is bursting with sweet, refreshing fruit notes reminiscent of lychee, blueberry and crème brulee.

THE STORY

Due to it's intense fruitiness, this lot was named Duwancho after a local fruit found in the Keramo area. This particular lot is selected from the Keramo washing station, part of Daye Bensa's micro-lot program that separates out different lots to optimise quality. Founded in 1996, Daye Bensa is a farming, processing and exporting company that now owns 4 farms and 15 washing stations which provide income and farming support for local out-growers. This lot is made up of 279 small-holders near Keramo village growing a combination of  JARC varieties, such as Dega, Wolisho and Kudhume and wild Ethiopian Landrace varieties.

PROCESSING

Once picked, cherries are floated in small tanks  to separate out ripes from under-ripes. After this they are transferred to raised beds where they are dried in the sun for 13-15 days and turned by hand every 15 minutes and defects picked out at the same time.
