OUR CUPPING GUIDE

Coffee Cupping is the industry-standard method for tasting coffee to score it for quality and identify defects. Growers, exporters and importers will cup coffee to establish its quality and price. Roasters will then cup coffee to develop tasting notes, roast profiles and keep on top of QC. Once it reaches a barista or coffee drinker it's a great way of comparatively tasting coffees and figuring out how best to brew it. Take a look at out cupping guide to get started. 

1. Weigh out 12g of coffee in to 210ml cupping bowls or glasses then grind on a medium setting.

2. Fill the cupping bowls to the rim with water off the boil, pouring quickly to ensure all the grounds are well saturated.

3. Leave to brew for 4 minutes. Using the cupping spoon, break the crust of the coffee and stir gently. While breaking the crust, this is a good point to get in there and smell the coffees aroma.

4. Use two spoons to remove any floating grounds and foam from the surface.

5. After another 4-6 minutes, the coffee should have cooled enough to taste. Take a spoonful of coffee and give it a good slurp!
