Many inventors have contributed to espresso machines as we know them today, but only one deserves recognition as the father of espresso. And you've probably never heard of him: Angelo Moriondo.
Coffee shop owner Moriondo was the first to use steam pressure to speed the coffee brewing process. His machine extracted using just 1.5 bars of pressure -- a far cry from the 9 bars we use today -- but it was a revolution at the time. Coffee could be brewed more consistently and much faster using his design.
We get the name "espresso" from the speed of this machine; it made express coffee.
Unlike the more famous names associated with espresso machine innovations (like Gaggia, Bezzera, and Pavoni), Moriondo never commercialized his design.
