Kicking off the year, let's take a closer look at one of the top trends from 2022 that I expect will only continue to grow: no-bypass brewing.
Bypass is the name given to water that makes its way around the coffee bed and into your cup, without extracting any coffee. While it isn't inherently bad, bypass makes it difficult to brew a consistent cup. No-bypass brewing removes the pathway for water to go around the ground coffee, so the coffee-to-water ratio is always identical.
In some ways, no-bypass brewing is an old idea with a new name. The traditional Vietnamese phin is a no-bypass brewer, for example. But in the past few years, a wave of specially designed no-bypass brewers -- like the NextLevel and Tricolate coffee makers -- have greatly increased the popularity of the technique.
