For another year in a row comes the return of one of the most ambitious specialty coffee projects that we have come across, and it delights us to experience and share it with you. Leonid Ramirez and his immediate family grow and process an impressive variety of Arabica cultivars. Leonid Ramirez took a risk, selling most of his personal property to invest resources and time into his coffee. Till today we still believe it was very much worth it.
We are currently roasting 3 unique processes of 1 coffee cultivar from his farm, Finca La Cortina de Hierro. Leonid's coffee's inherent high quality and complexity combined with expert processing form spectacular coffees, and this year they are evolutions from past lots.
Anaerobic Washed Process

Leonid modified the classic Colombian processing method by introducing an anaerobic controlled fermentation of whole coffee cherries before pulping and washing, to bring out the most in the coffee's flavour. We love this coffee for its red apple sweetness and blackberry acidity in this cup.
Leonid expanded on his honey processing by putting his coffee cherries through a 4-step process, including fermentation of whole and pulped coffee cherries in anaerobic and regular (aerobic) environments, followed by drying on raised beds. In this cup, we taste Honey, Brown Sugar, and Stewed Fruits.
This natural process is an evolution of Leonid's past naturals, incorporating an extended period of anaerobic fermentation in whole coffee cherries before a long and slow drying on raised drying beds. We found this approach to the natural introduced a vibrant array of tropical fruit flavours.

Our Cascara (Coffee Pulp Tea) makes for a unique drink to brew for guests during the festivities - especially a refreshing cold tea to balance all that feasting.
We are retailing the remaining canisters at all of our cafes now!
