Coffee is 98% water. So it seems logical that the better your water is, the tastier your coffee will be. But that's not exactly how it works.
Drinkable tap water could contain traces of chlorine left over from the water treatment process. Even if it's soft water, it can cause corrosion of your equipment due to lower pH.
So what about the purest form of water, a.k.a, distilled water? Well, you might end up with a flat-tasting brew. Because distilled water doesn't have any of the essential minerals necessary for proper extraction.
