Roast level is the biggest factor in how your drip brew tastes. But did you know the second most influential factor is the shape of the filter?
Yep! A study by the Specialty Coffee Association of America found that filter shape can impact the taste of your coffee more than minor changes in grind size.
Surprising, isn't it?
The explanation for this is that the filter shape affects the way water flows through the coffee bed, which influences extraction.
But that doesn't mean that cone-shaped filters are better than flat-bottom filters (or vice versa). It just means that one type of filter tends to accentuate sweeter notes like fruits and florals. The other filter type highlights darker, earthier flavors like cocoa, caramel, dried fruit, etc.
So if you have brewers that use differently shaped filters or have the option of changing the filter on your brewer, try brewing your beans both ways. You may find that you like one more than the other.
