Why are coffee beans oily?

Why Are Some Coffee Beans Oily?
 
 
Some coffee beans arrive coated in an oily sheen, but others aren't oily at all. So what does that oil mean, and is it a good thing? Lots of people believe that oily coffee beans are fresher, but that's not necessarily true.
 
The real reason is that coffee beans develop an oily outer layer when you roast them very darkly. If you roast coffee for long enough, the inner shell cracks, releasing the natural oils. So if you're a fan of dark, deeply caramelized coffee -- like French Roast -- you're very likely to see oily beans.
